The 2002 Toro Albalá Don PX Pedro Ximénez is an exceptional dessert wine from the Montilla-Moriles region of Spain. It is produced using the Pedro Ximénez grape, which is sun-dried to concentrate its natural sugars. The wine undergoes oxidative aging in American oak casks for 20 years, giving it rich, layered complexity.
Tasting Notes Deep mahogany color, indicative of long aging and concentration. Intense nose with notes of coffee, dark chocolate, raisins, dried apricots, and hints of cinnamon and balsamic. There is also a fresh citrusy element reminiscent of orange peel. Very sweet yet balanced by a pleasant acidity that prevents it from becoming cloying. Flavours of dried fruits, espresso, and caramel are prevalent, with a creamy, lingering finish.
Serving and Food Pairing Pop and pour Don PX slightly chilled, ideally between 10-14°C (50-57°F). Excellent with chocolate desserts, pouring over vanilla ice cream, with fruit-based desserts , blue cheese, desserts and aged hard cheeses such as Manchego.
